  2. ii.                Support Local Agriculture
  3. iii.              Save Yourself Money

These 3 not-so-simple things relate to 3 fairly simple problems.

Firstly: the hospitality industry produces a lot of waste – all containers associated with “takeout” or “TO GO” items must be re-thought.

Secondly: the cost of growing and distributing food is rising, so local food systems must be re-thought in order to avoid future food security challenges – the price of oil is going up, not down, and yet local produce currently comes at a premium in comparison to imported produce thanks to unsustainable subsidies.

Thirdly: not everyone wants to change the world, but everyone has an impact, and it’s easier to form positive habits – food-related or other – when positive incentives are involved.

This is how it starts.

Perhaps – at the end of the summer of 2012, depending on how much money is raised, project members and the public may be called to vote online to decide whether The Tiffin Project Foundation Fund should be used to buy out late-2012 stock, or to wait for 2013’s harvest.

Local produce is currently more expensive than imported produce. Most restaurants have very slim profit margins. As a result – very few Chefs dare to risk their bottom lines to support local producers. If The Tiffin Project can raise enough money, it can be more than a waste-reduction initiative – it can pay the difference between the current price of local produce and the current price of imported produce. If The Tiffin Project Fund pays the difference – how can restaurants say no to local items while they’re in season.

The Tiffin Project is not a stand-alone solution, but it has the potential to be one, or at least lead to one. That’s why it’s being called The Tiffin Project (and not The Tiffin Solution).
